HUEVOS DOMINGOS (Sunday's Eggs)
Serves 3-5
3 tblsp butter
6 eggs, well beaten, or
4 tblsp minced onion
egg substitute
2 medium-sized tomatoes,
Salt & Pepper to taste
peeled and cube
1/4 cup Parmesan or Romano
12 Tortillas, cut into 8 or cheese*
10 pieces (corn is best)
Freshly chopped cilantro or parsley
Melt butter in a heavy skillet.
Add the onion and tomato cubes. Saute until onion is very soft.
Add the tortillas and slightly brown them. Add the beaten eggs and cook,
stirring as you would scrambled eggs. When eggs are done, season with
salt and pepper and top eggs with the grated cheese. Sprinkle with
cilantro or parsley and serve hot. May be served with Salsa.
*In place of the Parmesan or Romano cheese
you can use your favorite shredded cheese but it will change the texture of
the eggs. If the cheese is soft, then just before eggs are done, add
cheese, cover pan and allow a minute or two for the cheese to melt after
topping eggs with it. Don't overcook.
